Description

The blue mussel is the best known and most harvested and used species of shellfish. Fresh blue mussels are easy and affordable to serve. Live blue mussels in stupor, packed in a controlled atmosphere package, are ready to boil. If you like, you can rinse them before placing them in fast boiling liquid. Let the mussels cook under a lid until the shells open. Cook the mussels for a few minutes, or only until the shells open. Note that now only mussels with opened shells are edible, so discard any that remain closed. Blue mussels are generally served directly from the pot. You can set a fork for each diner at the table, but the mussels should be eaten by hand. Remove the first mussel from its shell with your fork and then use the empty shell like a pair of tongs for eating the others. Serve the mussels with chunks of good bread. And don’t forget: the broth is definitely a part of the feast as well!
